PLACE OF ORIGIN/SOURCING: The Original Indian Bay Leaf of Kusha Spices is sourced from Shillong, Meghalaya which is the largest Bay Leaf growing state in India. This ensures originality and quality of this versatile spice.
PROCESSING: All Bay Leaves are hand plucked, sun dried and then air blasted to remove dust and extraneous material in the first phase of processing. The leaves are then individually inspected to ensure they are blemish free. Finally, they are hand wiped to remove the last vestiges of dust. This is a tedious process, but is necessary to get the leaves squeaky clean. The leaves are then ready for packing. Since Bay Leaves grow in moist regions, they tend to have harmful fungi growing on them. So, a thorough two phase cleaning is mandated.
ORIGINALITY: Most of the Bay Leaf sold in India is actually Cassia Cinnamon Leaf. The two varieties have distinctly different tastes. Genuine Bay Leaf only grows in the north eastern part of the country. Since transportation is difficult and expensive, many brands resort to selling duplicate Bay Leaf.
